We are using these process connector at one of our customers, but it took us a while before we understood that these require the enablement of Delta Transformations functionality, which is currently in limited availability and thus not enabled by default (see https://docs.celonis.com/en/delta-transformations-in-data-jobs.html). I would recommend to add this to the description. 

Also, for Order Management we see that the overall status (field GBSTA) from the Sales Order Items table (VBAP) is not picked-up by delta loads, since the change date AEDAT is not updated on status changes. Is there any solution for this?

thanks for your comment. I will modify our documentation to reflect the status of the required Delft Transformation.
