extract data from Datapool without updating the Data Model in an Action Flow

I do not believe there is away to access data that isn’t in a data model. I imagine it is designed that way because of the sheer volume of data that would consume on the environment. 

I’m curious what a use case for not using a data model table. Why would you want to develop an asset utilizing data which isn’t being used in a data model?
