Using celonis for O2C mining of Oracle EBS system. In one of the view, I go to edit, select on component and then go to component options.
For the units, I see it configured as <%=currency_symbol%>. Can you please let me know where I can find this parameter/variable defined. I find the value as Euro, where as it should be $

By view you mean you're using knowledge model and Celonis studio or just standard Process Analytics object?
IF that's Studio view, go to "Studio" tab, then find right package (the one that's used for the view) and click on the KPI category. There you can add or modify KPIs that can be used in the views / analysis.
For second case It should be found under Analysis options in the analysis. It should be located in saved formulas category. You can filter it by name.

I have changed the variable value from euro to $. However I do not the same refreshed in the analysis. Is there any thing that needs to be done after changing the value

It depends how the currency is set in the components. It may be set in currency field, added to the value in the formula (string concatenation) or added to the value in the backend which is worst possible way of implementing anything. Usually the first approach will be used.
I've tested just using variable as below - it seems to be working fine - change is visible a split second after updating the value:
