Good starter is training meant for data engineers, I'm afraid that there's no separate SAP training that could cover all aspects needed in our day-to-day work, however normal SAP trainings (for example standard FICO course) are always useful, as you need to know not only the table but connection between them, usage in transactions, meaning of fields and a ton of other things.

Having both extraction and GUI access to any SAP IDES (dummy enterprise with some dummy data) is very helpful.
