Has anyone any experience or resources in using Process Mining to evaluate users interacting with a SaaS product and generating an event log. My data shows the events of user sessions and I'm interested in both session and multi-session journeys.

As long as you have the audit log and can convert to an activity table for the data model in Celonis I do not see this being an issue. For multisession you ma need to think of the widget/object "case" being used i.e. user id.
