Celonis recommends using on-prem client instead of SAP extractor, so can the architecture used for SAP extractor also be used for on-prem client? If it is not usable, what should we change?

yes the architecture used for SAP extractor can also be used with on-prem client.

You can install on-prem client on the same extractor server. The setup can be done in parallel to the already existing SAP extractor and you can try some first connections with new on-prem and still use SAP extractor with Prod SAP connections till you are ok to change all connections to the new on-prem client. Afterwards you can delete the old SAP extractor from your extractor server.

Only thing you should be aware of is that the SAP RFC Module should be up-to-date on the SAP system (at least 3.3.0 or above).
