I have a question regarding on-prem Celonis extractors. When you say extractors are they similar to the data base connections as shown below. Or does this apply to something different? If so, what is the difference?

Hello Anna. Yes, similar, but extractors come with pre-defined configurations, system-specific.

Yes it's somewhat similar.
But extractor are generally specific to particular subject area. Like for sales tables in SAP, There can be a seperate extractor which will bring data from sales tables like VBAK, VBAP etc.
