Is there a possibility of collating data from different data pools so that a dashboard can be built for task mining which will then enable us to see how many users have installed task mining and analyze the captured data which is residing in separate data pools for each teams?
Yes, data in one data pool's data connection can be shared with other data pools. In the data pool > data connection, click the ellipses (...) menu and follow the prompts:

Thanks for looking into this. However, when I try to create a task mining project, the task mining seems to be storing the data on cloud which seems to feed the data model.
Please find below screenshot depicting the same. So there seems to be no data connections in this case but data model exists.
Also, when I try to see where the data resides by creating a transformation. It does not appear under any schema (schema search returns no results) but has some auto built-in tables where data can be seen. Hence, unlike normal process mining data pools I am unable to see any data connections with ellipses (...) to share it across. Hope this clarifies.

I am not very familiar with the task mining feature. However, if there are tables they must exist somewhere. You should send in a support ticket support@celonis.com to see if there is some way to accomplish what you want.
Another idea would be to use ML workbench to query the Task Mining model programmatically and then write the results to another model in a different data pool.
